Key Lime Pie

I thought that I couldn't make a good pie and then I found this simple recipe on that looked too good (too easy) to be true. Here's is my slightly altered version of the recipe:
(1) 9" graham cracker crust
(2) 14 oz. cans of sweetened condensed milk
3/4 cup key lime juice
1/2 cup sour cream

combine sour cream, lime juice and condensed milk and stir until well blended (I just whipped it up in my mixer for a minute)

pour mixture into crust and bake in preheated 350 degree oven for 8-10 minutes or until tiny pinhole bubbles start to form. do not let it brown!

I had lots of help from Lars with the lime juice. We had a totally fun time making this pie for Chad's birthday!! It turned out delicious. I am totally inspired to try baking more pies now!

mm, that looks good. maybe I could morph it into an allergen free recipe. I could make mock sour cream out of cashews. And use rice milk. And make an almond crust. Hmmmmm.
